Tomato, mozzarella and basil pita pizza

Ingredients

400g chopped tomatoes, well drained

pinch of salt

pinch of black pepper

3g Basil, Fresh

200g buffalo mozzarella cheese, torn up

20g virgin olive oil, for drizzling

4 Pita Bread, Pita, Whole-wheat

Directions

1Season the tomatoes with salt and freshly ground black pepper and spread over each pita bread (you probably won't need the whole tin).

2Sprinkle over the basil leaves and mozzarella, season with salt and freshly ground black pepper and drizzle over some oil.

3Place the pizzas into the oven and bake for 8-10 minutes, or until the base is crisp and the cheese is bubbling.
