1Preheat oven to 350 degrees F (175 degrees C/Gas Mark 4). Grease muffin tins, or use muffin liners.
2In large bowl, combine applesauce, 1 egg, molasses, bananas, and vanilla until smooth. Add cinnamon if desired. Mix in oats, bran cereal, baking powder, and salt. Fold in coconut (or dried fruit, sliced nuts, etc.). Fill muffin liners halfway with batter.
3Bake for 20 to 25 minutes in the preheated oven, until edges are light brown.
